Orchestrate the pass—call tickets, sync courses, and uphold seafood standards at speed. 

 

Become part of the team behind Seattle’s signature oyster house—where Northwest seafood, genuine hospitality, and precision in every detail shape a guest experience unlike any other. We're looking for expediters who work fast under pressure, know timing cold, follow safety and food-handling rules, and keep the pass spotless and efficient. If you love being the orchestrator at the pass—calm, decisive, and quality-obsessed in a seafood-driven operation, we'd love to meet you. 

 

 What You'll Do

  • Control the rail; call tickets clearly and in sequence; synchronize courses; keep the pass pristine. 

  • Verify plating, temperatures, and oyster-set accuracy; enforce seafood and garnish standards. 

  • Maintain calm, steady communication at the pass; scan the floor proactively and relay guest needs to servers. 

  • Load trays to standard; navigate congested spaces safely; use knives and basic equipment professionally. 

  • Keep the pass clean and efficient; complete station set-up/break-down and assigned side work. 

  • Orchestrate communication between line cooks and servers; coordinate tickets accurately; communicate holds, re-fires, more-fires, and 86s without delay. 

 

What You Bring 

 

Must Haves 

  • 3+ months as a server assistant at our restaurant or 6+ months expediting in high-volume or fine-casual kitchens. 

  • Plate-eye detail, assertive communication, and timing instincts. 

  • Can load and carry large oval trays safely and consistently. 

  • Ability to lift up to 40 lbs. and work on your feet for extended periods (reasonable accommodations available). 

  • Strong grasp of ticket coordination and timing standards for lunch and dinner. 

  • Weekend availability and reliable, consistent attendance. 

Preferred 

  • 6+ months as a server assistant at our restaurant or 1+ year expediting at comparable quality and volume. 

  • Reads tickets accurately with a basic POS understanding. 

  • Calm, composed, and efficient in tight, high traffic spaces, safe with knives and equipment. 

Pay & Compensation 

 

Average earnings $22-$32 per hr. with commissions. 

  • $4/hr. base rate + 6% pooled commission on restaurant's gross sales.  

  • If base + commissions do not meet Seattle minimum wage for the workweek, expediters are paid at least $21.30/hr.
